6 pkgs cream cheese, fat free
4 large eggs
2 large egg yolks
1 1/4 cups Splenda baking mix
1 tsp lemon peel
1 tsp vanilla extract
1/2 cup light sour cream
1 cup graham cracker crumbs
1 stick salted light butter
Blend cream cheese with Splenda mix.
Add eggs one at a time, then egg yolks.
Add lemon peel, vanilla and sour cream, and mix until smooth.
Melt butter and mix with graham crackers.
Pat graham cracker mixture in bottom of 9 inch springform pan and bake at 400 degree oven for 15 minutes.
Pour cheesecake mixture on top and bake at 450 degree oven for 15 minutes, then bake at 200 degree oven for 1 1/2 hours.
Let cool, then carefully remove springform pan from sides. (Sometimes it helps to run a wet butter knife around edges to loosen). Cool and cut into 12 servings!
