Fresh Apple Cake

A delicious, nutritious cake--wonderful in the fall with fresh apples from the orchard.
1/2 cup light margarine 1 cup sugar 6 oz nonfat vanilla yogurt 1 egg 2 tsp vanilla extract 2-1/2 cups flour 2 tsp baking soda 2 tsp cinnamon 1/2 tsp salt 1 lb (about 4 small) apples, peeled, cored and chopped
Cream margarine. Add sugar. Add yogurt and egg, beating until fluffy. Combine dry ingredients and mix well. Stir into creamed mixture. Add apples. Pour into 9x13 baking dish sprayed with nonstick spray. Bake at 350 for 50-60 minutes or until toothpick comes out clean.
