An easy snack everyone can enjoy!
3/4 cup margarine 1/2 cup honey 2 egg whites 1 tsp vanilla extract 2 cups all-purpose flour 2 tsp baking powder 1/2 tsp salt 1-1/4 cups grated carrots
Mix the butter and honey. Add eggs, and beat well. Blend in vanilla. In a separate bowl, sift together the flour, baking powder and salt. Add the wet ingredients and mix well. Stir in carrots. Drop the mixture, by teaspoon, on greased baking sheets. Bake at 375 degrees F (190 degrees C) for 15 minutes and cool on racks. ENJOY!
