Scrub potato; pierce several times; spray butter all over. Set on plate microwave on high 5 to 7 minutes turning over half way through. Meanwhile, cook veggies in small sauce pan spray with butter and season to taste. Cut potato in half length wise put veggies on top. Sprinkle Parmesan and top with crushed croutons.
