End of Summer Squash Print Recipe

Side dish using veggies and fruit that are plentiful at the transition between summer and autumn.


Ingredients
1 tsp canola oil
1 large sweet onion, coarse chopped
2 tsp sugar
3 medium summer squash, coarse chopped
3 medium zucchini, coarse chopped
1 large apple, coarse chopped
1 tsp Chinese 5-spice blend
black pepper to taste

Directions

Heat the canola oil in a skillet until just shimmering.
Add chopped onion and saute' until onion is transparent and edges are lightly browned.
Add sugar and continue to saute' for 30 seconds, or so.
Add chopped squash, zucchini and apple. (If needed, add a tiny bit of water.)
Mix in the 5-spice blend and black pepper.
Cook down over medium/low heat until squash and zucchini are soft.
