2 tbsp lemon juice
1/4 cup whipped salad dressing, fat-free
1 tbsp parsley flakes
1/4 tsp salt
3 cups precooked chicken cubed
1 cup thinly sliced celery
1/2 cup frozen green peas, thawed
1/2 cup sliced can mushroom, drained
Optional paprika and pimento

Preparation time: 10 minutes( plus at least 2 hours chilling time)
Cooking time: none
Yield: 4
In a medium mixing bowl, combine lemon juice, salad dressing, parsley, and salt.
Add the chicken and celery. Mix well.
Gently fold in the peas and mushrooms.
Chill before serving.
Garnish with pimento or paprika (optional).
