5 oz. washed, ready-to-eat, Italian-style salad (6 cups)
1 cup egg substitute
1/4 cup prepared pesto
2 teaspoons olive oil
2 tablespoons freshly grated parmesan cheese
Place the lettuce in a microwave-safe bowl and microwave on high for 3 minutes. Place on 2 plates.
Mix egg substiitute and pesto together.
Heat oil in a medium-size nonstick skillet on high.
Reduce the heat to low or remove the pan from the heat; add the egg mixture.
Scramble about 1 minute, or until desired doneness.
Serve over the lettuce.
Sprinkle with Parmesan cheese.
