10 cups leafy greens (kale, chard, spinach, collards)
6 eggs
1/2 cup bread crumbs
1/3 cup grated Parmesan or Romano cheese
1 tbsp oil
1 cup cooked rice

Chop greens and saute' in oil.
Drain and put in a greased oblong casserole (eg. 12x8x3). Stir in rice and beaten eggs.
Season with salt and pepper.
Sprinkle with bread crumbs and cheese.
Bake at 350*F for 25 minutes.
Note: a grated zucchini also tastes well in this dish.
