Swiss Chard Rolls Print Recipe

Serve this with sourdough bread and a simple green salad for a tasty and nutritious meal.


Ingredients
2-3 lbs. swiss chard
16 oz. Ground beef, lean (or ground turkey)
2 large eggs
10 sprigs parsley, minced
1 cup Parmesan Cheese, grated
1 Tbsp Salt
1 Tbsp black pepper
3 cloves Garlic
3 cups Spaghetti Sauce (tomato sauce)

Directions

Combine eggs, salt, pepper, parsley, garlic, Parmesan cheese and ground beef, leaving 1/4 cup cheese for later. Mix well.

Wash the Swiss Chard leaves.

Take about a 1/4 cup of the meat and put at the end of a leaf, Rolling the leaf with the mixture inside of the leaf.

Lay in a large roasting pan one after another.

Cover with pasta sauce and the rest of the cheese.

Add enough water to just about cover the rolls.

Cover with foil and bake at 400 for 1 and 1/2 hours or until Swiss Chard is tender.
