1 cup sweet corn
1/2 cup refried beans
1 cup Cotija cheese
3 flour tortillas
3 tbsp red taco sauce
1/4 cup onion, chopped
16 oz extra lean ground beef
2 tsp taco seasoning
Preheat oven to 350 degrees. Brown up the meat as you would for tacos. Add the taco seasoning and water when browned.
For this recipe I like to put the raw corn on the BBQ, so it has that BBQ flavor, just until it is blackened lightly. Cut the corn off of the cob and seperate the kernals.
In a small round baking dish, place one tortilla, a tablespoon or two of beans and spread it around.Take a palmful of the Cotija cheese and spread it on top of the beans. Then add the taco sauce and the onions, if you like. On top of this place a scoop of the taco seasoned beef. Layer two more times. On the top of the last tortilla, cover with beans, taco sauce, and remaining Cotija.
Bake in the oven for 45 minutes covered in foil. Take off the foil and bake until cheese is browned and melted thoroghly.
