Buying Garlic

Look for:
garlic that is dry, plump, firm and without blemishes. Fresh garlic should be white to off white.

Avoid:
garlic with dark, powdery patches or garlic heads that are soft and have blemishes.

Seasonality: All year

Storing Garlic

Do not refrigerate. Store garlic in a cool, dark place (such as a pantry) or in a clay pot. Store up to 3 weeks.

Preparing Garlic

To peel, quickly and gently press down on each garlic clove with the flat side of a knife. (Note: Fresh garlic is stickier and harder to peel.) Discard papery skin, trim the root end, and chop.
