Buying Cauliflower

Look for:
cauliflower with compact, creamy white curds and bright green, firmly  attached leaves.

Avoid:
cauliflower with brown spots or loose sections that are spread out.

Seasonality: All year; peak season is fall.

Storing Cauliflower

Refrigerate cauliflower in a plastic bag for up to 5 days.

Preparing Cauliflower

Do not wash cauliflower until you are ready to use it. Rinse under cold running water. Remove and discard outer leaves, stem, and core. Cauliflower can be broken into florets or chopped.
