Ricotta is a great alternative to cottage cheese - a whole lot less sodium so I'm glad to see this being used a few recipes! I make my own plain greek yogurt and eat a bowl w/ fresh fruit and a bit of low fat protein cereal everyday for my breakfast at work. I may try adding ground flax but you have to be careful, it definately gums stuff up if you add too much.
