Danielle, you cracked me up .... with how you've tracked your own stars in the making; great job on the workouts! I only have a vague idea when I have missed a day or days. I think you should get an extra star for keeping track. For that matter, Amanda, you should get lots of extra stars for starting our challenge, making up the daily challenges, and keeping track of everyone's stars. Thanks!

I will be in Sante Fe through the Memorial Day week-end; wish me luck as I will be trying to interest galleries there in my artwork. I won't be checking in; I will be doing my cardio and strength work while I am there; so maybe, I can still have my stars for the days that I am gone?

We are almost to June ... can you believe it... and we have all been doing so well. I am not horrified by myself in a bathing suit any longer.

Wise - thanks for the ideas! I've thought about grilling, but wasn't quite sure how to go about grilling eggplant. But now I can start looking for recipes. I think that's my problem with eggplant - I've only ever had it cooked in things, so it soaks up a lot of the juices & gets all soggy. *eek*

As for grapefruit, I LOVE that. I peel & eat it like an orange.

I have so much catching up to do! Yikes! Thankfully this coming weekend I'll have off for 3 days and it will be gorgeous! Lots of bike riding and rollerblading!

My favorite salad dressing is Olde Cape Cod Toasted Sesame soy & Ginger Vinaigrette (Fat Free of course!). My favorite veggies are bell peppers. They're great raw or grilled! I also love corn on the cob!

I did Thursday, Friday, and Saturday. I could've sworn I already did Thursdays, but I saw I didn't post about it, so if I did, I did it twice now!

My cardio on Friday was playing kickball with my family~ so much fun!

I'm going to go back today and read through some of the posts I missed and maybe answer some of the questions :)

I did the May 21st challenge. It has been a bad week for me, but I am back on board. :)

QOTD: I hate most vegies. I do like carrots only raw. and Ummmmmm Corn and I enjoy a good salad with thousand Island dressing.

I am done, except for the planning (see below); please, may I have my star ... I don't want to suffer from star envy.

On eggplant, try slicing it into long strips, brushing the slices very lightly with olive oil, seasoning (I use paprika) and grilling. Eat it with some pasta sauce. Add a little low fat mozzarella if you like. It really is delicious this way; I promise. Also, the Japanese eggplant (smaller variety) is a bit denser than the regular kind; you might try it. The biggest problem with eggplant is that it really soaks up oil, and ends of tasting a greasy, to me, anyhow. Grilling avoids this problem. I don't know how to salvage grapefruit ... yucky, yucky, yucky.

Bippers, I forgot out baby carrots! I LOVE them. I can eat a ton at a time, lol. :)

Finished the challenges for Thurs, Fri, Sat & Sun. 4 more stars please.

I eat baby carrots pretty much every day. I also really like broccoli, cauliflower, yams, red peppers, green beans, mushrooms, squash on the grill, and asparagus on the grill too. Not too many veggies I don't like.

For salad dressing - it depends on what I'm eating. I have a great tomato based recipe I really like with spinach and hard-boiled egg salad but it is a little heavy in calories. Mostly I do Light Done Right Italian dressing or balsamic vinaigrette.

I just love a good salad with blue cheese, apples, balsamic vinaigrette, and chicken.

Ahh, my life has finally quieted down and I am just getting to the computer since Thursday. Lucky me I did cardio and strength training each day, so I really don't have to make up any challenges! Yahoo! I have completed Fri, Sat, Sun, and Mon. 4 more stars for me!

My fav. floor exercise would have to be push ups. I never thought I would ever say that!
I have found that the daily challenges are really making a difference in my tonality. My husband and even my mother-in-law have commented!
My favorite vegetable would be green beans. I love Dorothy Lynch and Ranch dressing combined.

Still catching up - I've got a good chunk of the "leftover" cardio knocked out, so I should be able to get through today's without problems!

QOTD: I love pretty much ALL veggies (except eggplant - I can't get used to that one), epscially red & yellow bell peppers, and fruits (as long as the fruit is firm - I hate mushy/bruised/mealy fruit) - strawberries and kiwi being near the top of my fruits list. Favorite dressings include fat free ranch, italian, raspberry or balsamic vinaigrette. I really should mix it up a bit & look for low-fat versions, since I seem to have a hard time meeting my daily fat requirements.

Forgot my favorite salad dressing - hands down, Outback's Tangy Tomato. When at home, I alterate between sundried tomato and raspberry vinegrette.

I'll do the half of this challenge that I can when I get home, but I wanted to at least respond to the QOTD, so that I will get bumped through my email to post here.

QOTD: It varies depending on my mood. Right now it is asparagus (especially grilled!) but it won't be long before I will be eating corn on the cob pretty much daily. I also love sweet potatoes (again, grilled).

Hmmm .... hoping I can still get my stars even if I don't plan ... it works better for me not to plan (I don't feel locked in that way, and there is only 1 of me). I do have various healthy options that I choose between for breakfast and lunch is often mostly different veggies I have on hand these days.

Which gets to the QofD: I love almost all veggies and most fruits (yuck on grapefruit) ... I am amazed each time I try a new one. For a while I was trying a new one every week. I think mashed potatoes are one of the perfect foods; unfortunately, I like them with lots of butter. Yummy. I am not a big fan of dressings ... for salads, I prefer them without dressing but because fat helps with nutrient absorption, usually I'll toss some olive oil vinegarette in if I don't have hard boiled eggs/cheese or bacon bits already in the salad. When I do go for dressing, it's usually Thousand Island or Ranch ... so I have to be careful with amounts on those. I keep these dressings on the side, and dip the fork into the dressing before the salad. That really helps cut down the amount of dressing.

CHALLENGE OF THE DAY:
30 Minutes Cardio/Walk/Jog/Run, 30 Dumbbell Side Bends (15 on each side), 2 45-60 Second Planks, 30 Lateral Raises, and Plan what you're going to eat for breakfast and lunch tomorrow.

QUESTION OF THE DAY:
What is your favorite vegetable and what is your favorite type of salad dressing?

ANSWER: I love cucumbers as well as corn on the cob and potatoes. I love having a big salad with lots of yummy vegggies. My favorite dressing has to be Fat Free Catalina; it tastes SO good. I also love ranch and Italian.

Hey Everybody!!
I hope you're having an awesome day! Great job with the challenges as usual. :)
Bippers, I should start adding planning to the challenges because that's one of my biggest challenges too. I notice that when I plan what I'm going to eat, I end up eating less that day which is what I need to do. :)
