| I made the Spark people recipe "Crispy Sesame Shrimp" It was quite tasty! I had steamed asparagus & a bread stick on the side.

ooooooo... clam linquini - I'm going to have to try that one...
this morning I modified the Frittata recipe making it from egg beaters rather than regular eggs - cuts the fat and cholesterol, and thus the calories considerably. I'll cut the salt next time though.

I cooked this today - ate some for breakfast and the rest for lunch - yum! Breakfast - Zucchini Frittata - 2 servings
4 teaspoons extra-virgin olive oil, divided 1 cup diced zucchini (1 small) 1/2 cup chopped onion 1/2 cup grape Tomatoes or cherry tomatoes, halved 3 mushrooms - sliced 1/4 cup slivered fresh basil leaves 1/2 teaspoon salt, divided Freshly ground pepper to taste 4 large eggs 1/3 cup crumbled feta cheese (2 ounces) 1. Heat 2 teaspoons oil in a 10-inch nonstick skillet over medium heat. Add zucchini and onion; cook, stirring often, for 1 minute. Cover and reduce heat to medium-low; cook, stirring occasionally, until the zucchini is tender, but not mushy, 3 to 5 minutes. Add tomatoes, mint, basil, 1/4 teaspoon salt and a grinding of pepper; increase heat to medium-high and cook, stirring, until moisture has evaporated, 30 to 60 seconds.
2. Whisk eggs, the remaining 1/4 teaspoon salt and a grinding of pepper in a large bowl until blended. Add the zucchini mixture and cheese; stir to combine. Wipe out the skillet.
3. Preheat broiler.
4. Brush the skillet with the remaining 2 teaspoons oil; heat over medium-low heat. Pour in the frittata mixture and cook, without stirring, until the bottom is light golden, 2 to 4 minutes. As it cooks, lift the edges and tilt the pan so raw egg will flow to the edges.
5. Place the skillet under the broiler and broil until the frittata is set and the top is golden, 11/2 to 21/2 minutes. Loosen the edges and slide onto a platter. Cut into wedges and serve. Nutritional Information: 375 calories 38 total fat (10 g sat, 28 g mono) 447 mg cholesterol 10 g carbohydrate 21 g protein 3 g fiber 863 mg sodium

| Our salmon turned out good. tonight it's going to be Balsamic Chicken & Asparagus with Balsamic Butter (recipes on www.lowcaldiner.com) I've actually already made this recipe & my family loved it!

Our Chicken turned out great. I'd definately make the marinade again. We're having Herb Crusted Salmon tomorrow night.

Becky - your marinade recipe sounds yummy...
I recently tried the spicy garlic shrimp from lowcaldiner.com - we ate it over a salad of greens, Tomatoes and cucumbers... It was terrific!

Things are going great around here! I'm having fun with my cooking. I made Shrimp & feta with Tomatoes off the www.lowcaldiner.com for dinner last night. Very good a must try!
I'm grilling chicken for dinner with a Teriyaki Marinade (it's marinating now & smells great), & serving Squash with it.
Marinade:
1/4 cup soy Sauce 1 Glove minced garlic 1 Tbl Honey 3 Tbl Orange Juice (I used fresh) 1 Tbl packed brown Sugar 1 tsp Sesame oil (dark asian kind) 1 Tbl minced peeled fresh giner (I omitted this from the recipe since I didn't have it on hand)

I haven't cooked my recipe yet, but I have the ingredients written down on my grocery list. That's a BIG start for me! My husband said the recipe sounds delicious. He's a good sport. Thanks again for this great idea.
I'll have to try the Balsamic Chicken recipe. Thanks for the website referral. : ) I just checked it out and the Crock-pot Chicken Stroganoff looks easy & yummy. hmmm.

Since joining Spark I've went from barely cooking at all to cooking new recipes several times a week. My whole family has been eating healthy & we all are getting our veggies in. I was originally inspired by another Spark member to start cooking. I thought it would be a great challenge.
