I made this when I did Weight Watchers, someone called this zero points soup. This makes a lot of soup , I made it and put it in single serving ziploc type of containers and freeze it. If you leave it in the fridge, the smell of soup will consume the fridge.
This tastes sort of like a minestrone soup. You can add some pasta or chicken if you like.

Veggie Soup

6 cups broth (whatever you like, veggie or chicken)
Cooking spray
2 carrots cut into coins
1 large onion, diced
4 cloves chopped garlic (more or less if you like)
1 28 ounce can of crushed tomato (I used Pastene)
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1 pound fresh green beans cut in thirds
1 large green and 1 yellow zucchini, diced
1 large head of broccoli diced up
1 large head of cauliflower diced up


Bring the broth to a boil .
Spray a Dutch oven with cooking spray and heat on MEDIUM HIGH. Add the carrots, onion and garlic and cook for about 5 minutes. Add all the remaining ingredients EXCEPT the zucchini and bring to a boil. Cover, reduce the heat to MEDIUM and simmer for abot 15 minutes or until all are tender. Add the zucchini and cook until the zucchini are tender. Serve and enjoy! Add more water if the soup is too thick.

I'm tired of going to the store and buying soup. They are 40% of your daily sodium. Does anyone have good recipes that are low calorie for soup? TIA!
