Go to the store (WalMart or even the grocery store) and buy a little oven thermometer. It hangs from one of your racks...set the oven and compare it to the temp on the new thermometer. I am a baker and every new oven is different, so I swear by the little guys that go inside. Once you know the difference between the gage and the real temperature, you can set it accordingly.

did you pre heat the oven? it usually takes aboiut 20 minutes to heat up an oven.

You haven't done anything wrong. The oven needs a visit from a repair person. Thermostat is broken. And I think I'd put the pork in a separate vessel so it doesn't cross contaminate the veggies.

I am not exaggerating when I say that although I've lived in this house for 18 months, tonight was the FIRST time I've attempted to use the oven.
I took a baking dish, lined it with foil. Cut up onions, potatoes, carrots and zucchini into 1" cubes, seasoned them and put them in the pan. I then seasoned some sliced pork loin and put it on top of the veggies. Covered it with foil, put it into the oven at 350, expected it to be done in 35-40 minutes (not sure why, but I did).
Here I sit, two HOURS later...it's not done. After the first hour, I increased the temp to 375. The potatoes are still hard, and the pork's gotten white on the outside but is still really pink inside. I hate to throw it out, but it's almost 8:30 here, and no dinner. I'm frustrated and hungry.
