We eat mostly meatless at our house, which means we eat LOTS of beans.

One of the things we'll often do for lunch is mix:

1 can black beans (rinsed and drained)
1 can kidney beans (rinsed and drained)
1 can chili beans (DON'T Rinse! You'll lose the flavorings)

Sometimes we'll mash or blend it smooth, sometimes not. Add a sprinkle or two of cheddar cheese and heat.

It's good with chips, in a burrito or taco, on nachos, over lettuce as a taco salad, etc.

Another recipe, this one for the crockpot:

Put 2-4 frozen boneless, skinless chicken breasts in the crockpot.

Top with:
2 cans black beans (rinsed and drained)
2 cans corn kernels (or frozen corn)
1-2 jars chunky southwest style black bean and corn salsa (you can use regular salsa, but we like it this way)

Let it cook all day then pull the chicken apart, stir together and serve.

Once again this is a very versatile meal. We usually eat it over lettuce with tortilla chips as a salad to get more veggies in, but you can also serve it over rice, in burritos, sandwiches, etc.

You can mess around with the proportions too - more chicken if you're a meat lover, more salsa if you want it thinner/spicier, etc.

I have a bunch of bean recipes. But I don't know how to look up the calories and things. If these look good to you let me know and I'll send you some more.

Ada's Beans

Makes 8 servings

1 lb Red Beans, cooked
1 tsp Whole Allspice
2 tsp Sugar
2 Tbsp Chili powder
Cumin and oregano to taste
1 sm can Tomato sauce
1 sm Onion, chopped
1 clove Garlic, crushed and minced

1. Add all ingredients and simmer until beans are tender, about 1/1/2 hours.

2. Remove whole allspice before serving.

3. Serve over spanish rice with warm tortillas.

Baked Beans
Makes 4 servings
3 cups Canned vegetarian beans
1/4 cup Catsup
2 Tbsp Brown Sugar

1. In small (1 quart) casserole dish, combine beans, catsup, and brown sugar.

2. Cover and bake at 350*F until bubbly, about 30 minutes.

Bean Burritos
Makes 6 servings

1-2/3 cup Kidney beans, cooked
1/2 cup Tomatoes, finely chopped and peeled
1/4 cup Green Pepper, chopped
1/4 cup Onion, chopped
2 Tbsp Green chilies, diced
1 clove Garlic, crushed and minced
1/4 tsp Salt
2 Tbsp Oil
Hot Pepper sauce (like Tabasco)
6 lg Flour Tortillas
Taco Sauce
Tomato Wedges (optional)

1. Mash cooked beans.

2. Saute chopped tomato, green peppers, onions, chilies, garlic and salt in oil until thoroughly heated.

3. Add mashed beans, to taste; mix well.

4. Wrap tortillas in foil and heat at 350*F for 10 minutes.

5. Fill each tortilla with about 1/4 cup bean mixture. Fold the sides of the tortilla over the center. Serve with taco sauce.

6. Top each with tomato wedge. Serve warm.

Congressional Bean Soup
Makes 6 to 8 servings

8 cups Water
1 lb Navy beans, dried
1 Meaty ham bone
1 cup Celery, finely chopped
1 Onion, finely chopped
2 Tbsp Parsley, finely chopped
1 tsp Salt
1/4 tsp Pepper
1 Bay leaf

1. Soak the beans overnight. rinse very well.

2. Pour the beans and 8 cups of fresh water into the slow cooker. Add remaining ingredients. Cover and cook on low 12 to 14 hours or until beans are very soft. Remove bay leaf and ham boan. Cut meat off bone; return met to beans. Discard bone and bay leaf. Serve soup hot.

I made the spicy black bean burgers found in the SP recipes...they were awesome!

Easy black bean and tomato salsa with some cilantro is always good.

I also enjoy vegetarian taco soup.
Use 3 kinds of beans (your favs)
chili seasoning
1 packet ranch dressing mix
2 cans tomato

I'm looking for bean recipes that are healthy. I like kidney beans, navy beans, pinto beans, etc. Has anybody got any good ones?
