jewish/polish has pirougue italians have gnocci there's a german one starting wth K that's usually served in a butter sauce..
most are pretty much a mixture of potatoes (boiled, chopped and mashed) mixed with eggs, maybe some milk, and flour as a binder - then boiled, or sauteed.
