It says 9 servings, but it doesn't say how much a serving is. I actually pulled this copy off the 'net. I will have to go dig up the original recipe in my "hard" files to let you know. Sorry!

I have cooked lots of curries, but now I prefer to buy them. The problem....you can still smell them in the house a week later when you cook at home.

This one is from Cooking Light and it is one of my favorites! It takes awhile to cook on the stovetop, but it is easy to make. More of a Sunday meal I think.

Indian Chicken Curry
(Cooking Light)

INGREDIENTS
2 teaspoons curry powder
2 teaspoons chili powder
2 teaspoons ground red pepper
1 teaspoon salt
1 teaspoon ground coriander
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon ground cinnamon
3 tablespoons butter or stick margarine
1 cup chopped onion
2 cloves garlic, minced
1 pound skinned, boned chicken breast, cut into 1-inch cubes
1 (8 ounce) container plain fat-free yogurt
1 (6 ounce) can tomato paste
5 cups cubed peeled baking potato (about 2 1/2 pounds)
4 cups water
4 1/2 cups hot cooked basmati rice
2/3 cup chopped tomato

DIRECTIONS

Combine first 8 ingredients. Melt butter in a Dutch oven over medium heat; saute onion and garlic 5 minutes. Stir in spice mixture; saute 5 minutes, stirring frequently. Add chicken, and saute for 10 minutes, stirring frequently.

Combine the yogurt and tomato paste; stir with a whisk. Add yogurt mixture, potato, and water to pan.

Bring to a boil; cover, reduce heat, and simmer for 1 hour, stirring occasionally. Serve over rice, and top with tomato.

Hmm gosh every time I read this board I get hungry for indian food all over again...We have lovely inian restaurants here in Portland, but I love cooking so I really want to master more indian food, not just currys. My father grew up in Africa, and my Mum was travelling all over as a young women...Grandma went to the real cordon bleu in France...so I really love cooking and experimenting.

naan are not that bad. We get frozen ones that we heat up in a pan. They are around 100 calories a peice, but SO easy to make.

Chapatis are like whole wheat tortillas that many indians (every day indians) eat with lunch/dinner. The are v. simple to make, but an art if you will. It's a lot easier for a lot of folks to get just get some at the grocery store.

I really love indian food. I have some aloo capsicum for dinner with naan and fat free yogert.

Julie Sahini's recipes are not bad, if you cut the oil in 1/2 or 1/3.

Curry is a great idea! They do make 'light' coconut milk, but what I used to do is this: I mix up powdered milk but I use 1.5 to 2 times the amount of powder. I also use that as a substitute for cream in recipes (ok, I know this may horrify the gourmet cooks in our midst but...) "Double strength" milk would have 180 cal in a cup & no fat /135 cal for the 1.5 strength). You could probably add coconut flavoring, though I never tried that. Don't give up on curry! good luck!

My son's friend's Mom makes it. She greases the griddle with a stick of butter when she makes it. How about a nice Chapati instead great flavour but no fat.

Wow, you have all been so helpful, this is awesome! Has any one else been craving curry with all this talk about it or is it just me?

Does anyone know how to make Namm? I think thats how you spell it...the indian cracker/bread. Very good, but spendy...I'd like to make my own.

The tamarind sauce is available from Indian grocers. Lots of different kinds, but a little goes a long way.
If you live in Canada the PC Memories of Punjab is great (available at Loblaw and co. stores).

Check out the recipe for Cholay in the Spark vegetarian listings. It's a curried chick pea dish that's fast to make. The recipe includes tips on using tamarind and chana chat masala, which are both wonderfully tasty.
We make up a batch of the cholay and eat it almost every day.
As for tamarind: I had an ancient lump of tamarind pulp in the refrigerator. I put it in a cup of water and microwaved it until it was soft and made a kind of dark "tea." I added about a cup of this "tea" and softened tamarind pulp to the chick peas and then cooked off the water. [I let it cook while I do my weightlifting.]
Any ideas for a korma dish? I don't have much luck with yogurt sauces.

Hi PDX2007

I have just added a Lentil Curry to my website which we enjoy.

Going off the subject of food for a moment! We had a Ridgeback cross in SA, lovely dog but she had been taken away from her previous owners for bad treatment. Unfortuately this left her with an unreliable temperment so we had to always shut her up with visitors around. Incredible guard dog though.
Back to food - If you find any really nice recipes please let me have them for my site. I am away quite a lot in France and I like to have all my favorite recipes in a place where I can get to them easily thus the website. I did it mainly for my own convenience but it would be great if people share with me.

One of my favourites is cauliflower cooked with some curry sauce. A lttle sauce goes a long way, sometimes I just drizzle some spicy tamarind sauce over steamed vegetables, Yummy.

Wow, I miss curry right now. Any ideas? I dont think the usual Coconut Milk is diet friendly! Thanks for your input!
