i LOVE garlic powder (or is it garlic salt?) my other fav. is crushed red pepper (hot/spicy) i put on all italian food incl pasta, pizza.
i used to love But now i'm too used to it to be that excited by it: "pizza seasoning" i used to put it on pasta a lot.
i discovered i hate oregano... odd. and i've always disliked mint and dill. so i can't tell what to put those on!
not sure if cinnamon counts but i put that on slices of apple sometimes.
fresh basil is good on all italian food.

I think the best way to acquaint yourself with spices and seasonings is to find recipes that sound good to you that use spices you are unfamiliar with. Ethnic recipes especially will challenge you to learn to create new flavors from spices you haven't used before.
On a personal note, I enjoy cumin probably more than any other spice. I like its versatility: I can use it to flavor my Mexican recipes, Thai recipes and Indian recipes (I even put a touch of it in my marinara sauce to add richness and dimension). It's great to add to all kinds of foods from all over the world.

The best thing I can recommend to you is to read the spice bottles in the store. They usually give you a good basic over view of the spice and what it can be used for. The other thing would be to look through cook books and notice what types of spices are used in certain dishes.
I normally love to put in either fresh or dried basil or rosemary in anything with an Italian flair to it. I go with cumin (rich and smokey) or cilantro and of course chili powder if I am heading towards a Mexican or Tex-Mex type of recipe.
The big thing is that you can't be afraid of spices. Just remember in most instances a little goes a long way. You never want something that is overspice because it will hide the true flavors of the foods.

I have a chart that lists spices & what they're best with. But, I honestly still have no clue. My basic seasonings are Lawrys, black pepper, onion & garlic powders. I just use my recipes & whatever spices they call for. I probably have most of em on my rack.

Hello. I am clueless about spices. I literally only have season salt, salt, and pepper to season with. Can you tell me what your favorite spice is and why? Can you tell me what it tastes like (fruity, woodsy, nutty, hot, etc)? Can you tell me what recipe you love to put your favorite spice in? Thanks guys! Carol
