Help! Need quick/healthy meal ideas

I keep lean meat, low fat chesse, and multi grain bread on hand all the time for sandwiches. I also try to keep soup, bagged salad greens, and yougurt too. They all make quick and healthy meals. When I do have time to cook, I try to make enough to have leftovers for another night.
And don't forget frozen dinners. Wouldn't want to make them an every night thing, but there are some pretty good ones out there. Lean Cusine and weight watchers especially.
Most of all I have learned from experience.....don't keep the chips and cookies in the house. If they aren't there, I will take a few minutes to make a sandwich or salad when I am hungry, but if they are, I will eat them....even if I have to move the lettuce out of the way to get to them LOL

I used to be in Wieght Watchers and one of the things that I learned there was this quick to make and keep soup for those kind of days:

1 box or 3 cans of broth (your favorite chicken or beef)
Assorted veggies ( I use yellow squash, zucchni, mushrooms, onions, snap beans , and garlic)
1 pkg of stew meat or lean beef strips
olive oil
salt and pepper to taste

Brown the meat with the garlic and onions and salt and pepper in the olive oil. Wash and cut all veggies and toss in. Open the broth and pour on top! Add water if you like a thinner soup.

You can make a huge pot of this and then freeze into individual servings that can be microwaved. Or keep it in your fridge all week and use it to snack on when you are feeling hungry now! or for a quick meal.

Generally when I made this soup it kept in the fridge for a week and by the end of the week I was ready to make more. I lost almost 68lbs one summer and this soup was my mainstay because I was always in a hurry to go somewhere or to work.

I don't know about the rest of you but by the time I arrive home from work I am so exhausted that I usually buy fast food or eat whatever is handy at home(usually chips and cookies etc) - so if any of you can give me some quick, healthy (emphasis on quick) meal ideas it would be greatly appreciated.
