Sounds good! But if you are really sick of chicken you should try fish, shrimp, pork tenderloin, or filet mignon to mix it up a little.

For a baked chicken parmesan--
1. pour equal amounts of seasoned bread crumbs and grated parmesan into a large zip lock baggie. Add a pinch of salt and pepper and mix well
2. beat an egg and dip the chicken in the egg mixture, then drop it into the baggie. Shake until the chicken is well coated.
3. Bake at 425 for 15 minutes and then turn the oven down to 350 until the chicken is finished cooking, about 5-10 minutes more

Serve with heated marinara sauce.

I know alot of people get tired of chicken. There are so many other options. Try turkey, duck, goose, tuna. Can't eat too much duck, though. It's a little fattening, but it's soooo good.

Anyway....with my lifestyle change, I have found several ways to cook chicken! My favorite! Hawaiian Chicken by Robin

Cube 1 chicken breast
1 tblspoon Coconut Oil
(health food store or Wal-mart supercenter Louana's)
Fresh Pineapple cut bite size
Hawaiian Sweet & Sour Sauce (or sweet & sour of your liking)
Fresh coconut (or unsweetened) optional

Heat coconut oil
Simmer chicken until done (really slow cook it to let absorb the coconut flavor and it is really tender)

Add fresh pineapple & coconut simmer some more.

When done add 2 tbls of sweet sour sauce and let heat.

Now the sweet & sour has sugar....I just use enough to flavor up the chicken a little bit. Don't pour the excess sauce on there. haha

I have also found this is good to cook when you are having an urge for something sweet. It pretty much takes care of that.

I have a small baked "sweet potatoe" use spray butter "no calories" and I tsp of light brown sugar (15 calories) and add another veggie (frozen or fresh) and you have a meal that will fill you up!
