I scrub the sweet potato very well and pull off any stringy roots. Then I slice the potatoes and cut the slices lengthwise in fry shapes.
I use 4 medium-large sweetpotatoes and toss the resulting fries in 1 Tbs. of extra virgin olive oil and a little bit of sea salt. Cajun seasoning is also good. Bake at 400 until the right crispy doneness, about 15-20 minutes.

i tried one recipe once for it and it came out bad
but i tried this recently and it came out good (it uses butternut squash instead) but i found the 40 minute cook time was way too long for the size i cut mine so check on it at 25 and 30 mins

* preferabley baked and not fried.
