| I'm not a vegetarian, but if I were, I think I would live off of garbonzo beans (a/k/a chickpeas). I love to make hummus with them. Hummus is great to dip fresh vegetables in. Also wonderful to just throw them on top of a salad. Great source of protein and very healthy.

I am not a vegetarian but my dad and grandparents are. Going to fast food restaurants like Burger King, he would always get a Whopper with no meat and with cheese instead. Its got lots of veggies and if you get it no mayo as well, its not too bad for you! As mentioned before, the morningstar products are awesome! I think that even I prefer veggie burgers to the real deal. soy beans are honestly your best friend. Meat has a large amount of amino acids (that form protein) and it can be difficult to obtain them all when meat is taken out of the picture. However, soybeans are the exception and are your best source of protein. They are better for you than eggs and are more versitile as well. You can search allrecipes.com for a large variety of meals that are vegetarian friendly.
Good luck and enjoy!

Hi, I am a relatively new vegetarian, actually vegan. I decided to go the whole way and not eat any dairy products also. I chanced to read the book Eat right for your type which determines your diet according to your blood type, and according to that book I am an A+ and the diet for A+people is pretty much vegetarian.
One thing that I find helpful is to cook up a large amount of brown rice and pasta and keep them in containers in the fridge. I also cook up a ton of vegies by stir frying them - no oil or fat - just water to start and I keep these in a container too. Stuff like peppers, celery, onions, zuchini, anything you have around. Then when I am hungry and don't know what to do I just grab for a bowl of brown rice or pasta, cover them with some of the cooked vegies and then add a topping. Sometimes just a little plum sauce and also an oil free pesto sauce I make from pine nuts, basil, garlic and water that i whiz in the blender. This stuff is really good, and it is easy if you are in a hurry and don't have time to cook every evening.

Im a college staudent and a vegetarian, and although I love to cook, I have little time to do it. There are many fresh vegetables that I place in a bowl with the bottom covered just slightly with water and microwave for five minutes. They come out perfect everytime. It works well with broccoli, carrots, cauliflower, snowpeas, and even green beans.......

| You have probably already tried Morning Star products! I also am not too much of a cook,I work full time,so convenience is definately in my vocabulary. I also eat a lot of salad for lunch and dinner, along with a steamed vegetable, then, with that,I eat some form of soy product. I never get tired of it. I have recipes, but,I rarely cook. Hope this helps.

Hi,
I want to mention that there is a large vegetarian Sparkteam with an active message board. It is called Calling All Vegetarians (and Vegans). There is also another Sparkteam called vegan Fitness and Nutrition.
If you go to my sparkpage and look at my teams, you can click on either to visit them and post a request for suggestions. You'll get lots of ideas.
Here's a few... All of the below can be made with precut veggies or frozen veggies, canned beans, etc.
Beans and rice with veggies and seasonings (the possibilities are endless! Sometimes to save time, I just add barbeque sauce or even catsup.)
Taco bar with beans instead of meat
Chili with corn muffins
Veggie stirfries w/ tofu or tempeh.
Veggie bean stews
Chef salad (with beans or baked tofu instead of meat)

Like you I tend to not eat a lot of meat. It just does not appeal. However, getting enough protein is an issue to keep a balanced diet. I really enjoy beans. I live in Australia and we are coming into summer, so here is a favourite summer recipe: 1 tin red kidney beans (can use 4 bean mix too) 1/2 -1/2 finely chopped spanish (red) onion Chopped capsicum, using whatever you have and can be a combination of red, green or yellow. Add 1/4 cup corn kernals.
For summer salads a variety at each meal helps keep the meal interesting, and we usually have leftovers for lunch or the following night. Cheers,

I'm not a vegetarian, but I tend to prefer vegetarian choices. A great resource is www.whfoods.com (Worlds Healthiest Foods). They have lots of inspiring, easy recipes and it demonstrates techniques. Sometimes they go too far cutting the fat. I often add a little olive oil.
What kinds of vegetarian foods are you looking for? Amy's Kitchen has some vegetarian frozen and canned foods that are good. Tofu is very good and easy if you learn some basics about working with it. Slice it, marinade in a little sesame oil and soy sauce then stir fry in sesame oil with frozen green beans...
