Help! I need pie recipes!

Try cooks.com for great recipes. I found a sugar-free pie there that was DELICIOUS! It was a layer of cream-cheese like stuff topped with chocolate pudding, topped with vanilla pudding, topped with sugar-free cool-whip. It was decadent but sugarless! AWESOME!

I really like apple and cranberry pie. Make an apple pie leave out the cinnamon and add fresh or frozen cranberries.

This one is evil.

I make a carmel apple pie.
Slice about 5 large apples and mix with a half of a jar of carmel ice cream topping and 14 carmels cut in fourths.

I either make it as a double crust pie or add a streusel topping with pecans. I bet it would be good in a grahm cracker or oatmeal cookie crust.

I love making pies with the reduced fat Keebler graham crusts - 1/8 of the pice crust is 100 cal and 3.5 grams of fat.

I made the "pumpkin pie-wiches" filling and put it in a reduced fat graham cracker crust and refrigerated it. We liked it, and I'm making it again Thanksgiving for my diabetic father in law with sugar-free Cool Whip.

And what about a pudding pie with chocolate sugar-free pudding made with skim milk. Pour into a RF graham cracker crust and cover with cool whip. OR make the pudding and fold into the cool whip and pour the whole thing into the pie crust, and it's a nice substitute for French Silk Pie.

Edit: I had "Froze" in the pumpkin pie up there and I didn't - I just refrigerated it. Frozen Cool Whip tastes like an ice cube.

My normal "pie" is the impossible pumpkin & apple pie from Bisquick. That way there isn't a crust which is the most dangerous part of the pie. I'm really the only one in my family that likes crust so it works really well here.

That apple pie sounds delicious!! I might have to make that!!
I am planning on making 2 kinds of pumpkin, 1-2 kinds of fruity pies, 1-2 rich pies (like chocolate, ect).

APPLE PIE WITH OATMEAL COOKIE CRUST
Prep: 60 minutes Yield: 10 Servings

Recipe from The Taste for Living Cookbook: Mike Milken's Favorite recipes for Fighting Cancer courtesy of Beth Ginsburg and Mike Milken

Oatmeal Cookie Crust:
2 2/3 cups oat or white flour
1 cup maple or natural cane sugar
1 cup rolled oats
1 teaspoon cinnamon
1 teaspoon baking soda
3/4 to 1 cup unsweetened applesauce
1 egg white
1 1/2 teaspoons vanilla extract
Canola oil cooking spray

Apple Filling:
6-8 large, tart apples (about 11 cups sliced;)
3/4 cup maple or natural cane sugar
3/4 cup apple juice, divided
2 teaspoons cinnamon
2 teaspoons vanilla extract
1 tablespoon cornstarch

For Crust:
PREHEAT oven to 350 degrees. COMBINE flour, sugar, oats, cinnamon and baking soda. COMBINE, in another bowl, applesauce, egg white and vanilla. COMBINE wet ingredients with dry ingredients and stir until well blended. If mixture seems too dry to roll out, add up to 1/4 cup more applesauce. SPRAY a 9” pie pan with cooking spray. ROLL out half the oat mixture on a lightly floured surface to make a 12” circle. If necessary, press the dough into the pan with your fingers to get it into position. Reserve the remaining mixture for the top of the pie. BAKE in preheated oven for 10 minutes. Remove from oven and fill.

For Filling:
PEEL and core apples and cut into 1/8” slices.
COOK apples, sugar, 1/2 cup apple juice, cinnamon and vanilla in a saucepan over medium heat until apples are tender, about 5-10 minutes.
DISSOLVE cornstarch in remaining apple juice. Add to hot apple mixture, stirring constantly, until mixture thickens, about 4 minutes. Remove from heat.
PLACE apple mixture in baked crust.
ROLL out remaining crust dough onto lightly floured surface. Roll into an 11” circle. Pierce with a fork.
COVER filling with top crust. Fold top edge under and crimp. Set pie pan on a larger pan to catch drips.
BAKE until top crust is firm, about 15 to 20 minutes. Serve warm or chilled.

Per Serving: 378 calories, 1.3g fat, 0.2g sat. fat, 0g cholesterol, 5.3g protein, 88g carbohydrate, 4.6g fiber, 146mg sodium

I am in desperate need of some of your favorite pie recipes. They don't have to be healthy but they can be. I am making 5!! pies for a huge Thanksgiving celebration!
