Thanks, Amy and Edith. I'm just trying to get out of the chicken breast/salad rut.

While I don't elimiinate starches, I do limit them to whole food and one per meal. I thought I'd give you my quick method for cooking lean (cheap) steaks.
have a teflon frypan with a well fitting lid. Turn the frypan on high until it is hot enough to sear, then sear both sides of the meat. Turn down to almost low and put on the (preferrably glass so you can see) cover. When there is a puddle of liquid around the meat it is probably done.
This works for chicken breasts too.

I have a couple of favorites that are super easy. One I got from here, the other from a cookbook called, "The Good carb Cookbook".
First- Easy Salsa Chicken 3-4 frozen, skinless, boneless chicken breasts 1 can drained black beans 1 can Niblet corn 1 jar favorite salsa
Dump all in a Crockpot and let it go. When the chicken is cooked, remove and shred and put back. That's when I added cumin, chili powder, garlic powder, salt and pepper, and dried onion flake. I also have added either an extra can of black beans, white beans or garbanzo bean depending on what I have available. You can serve this on a tortilla, over brown rice, as a dip (took leftovers to work for a potluck...very popular).
Second- White Chicken Chili
Off the top of my head I can't remember the recipe (sorry, I am at work) but I have posted it here under "restaurant quality soups" as well as another chicken thread.
HTH!

Hi all,
I've searched the msg boards and recipe swaps, and want to narrow my thread to swapping recipes with others who have also discovered that eliminating white rice, potatoes, white bread, and sugar have helped them lose weight. I'm looking for new ideas for making dinners that are relatively low in simple carbohydrates, and higher in protein. I've done chicken breast and salad..... what's new out there?
