There is a recipe on www.cookinglight.com for blackened shrimp that I made last night. It's really good! I made up some rice with it and have the leftovers for lunch today. My husband is totally against eating anything diet and he really liked it too!

Peel and devein them, set them in a bowl of water heavily salted for 20 minutes. Drain, and saute them with a little olive oil, garlic, and minced tarragon, deglazing the pan with white wine to make a shrimp and white wine sauce for linguine.

I haven't put this in to find out calories, etc but on WW it was like 3pts/serving so it can't be too bad....

Saute a can of diced chiles, one small diced onion, about a tsp of minced garlic. Add 1 lb. shrimp. When they are pink add 3 chopped Tomatoes (I use romas because they have less seeds and juice), cook till warm, add fresh chopped cilantro (about 2 tbsp but I add it till it looks colorful!) and the juice from one lime (two if its not that juicy).

I know its not an exact recipe. On the WW site its called Shrimp Vera Cruz and its one of my favorite things to eat. Its not that spicy even with the chiles. The cilantro and lime juice balance it out very well. It takes about 10-15 min to prepare and about 5-10 minutes to cook. I serve it over brown rice now.

Soak your shrimp in pineapple juice (from can) for about 30 minutes. Wrap each shrimp with bacon (I use turkey, bf uses pork), place on skewer, alternating shrimp and the pinapple from the can. Cook on grill or under broiler.

In my fish section they sell "shrimp boils" that are great calorie and fat wish and you just throw it into the water with the shrimp.

We do these on the BBQ, but a George Foreman grill will work as well. Shrimp, mushrooms, pinneaple, cherry tomato, bell pepper (basically whatever you have). Cook some rice in broth instead of water and top with the skewers.

Clubhouse seasoning has an tomato-alfredo mix in an envelope. You can make it with 1% milk and save big time on calories. Cook up some whole-wheat noodles, cook your shrimp and toss it all together. I makes a great lunch for the next day too.

You can make a great salad by cooking the shrimp and tossing them with some diced tomato, diced avocado and chives. Drizzle with a little olive oil and lime juice, dash of salt and pepper.

I don't have a set recipe, but they're especially tasty grilled.

I peel and devein the shrimp (usually about 8 per person for dinner)and put them in a bowl with some lemon or lime juice, and Clubhouse Lemon and Herb seasoning mix, or Southwest Chipotle (I think that's what it's called) Mrs. Dash. Metal skewers always seem to work better for me, and they can be bought at Wal-mart etc. for a reasonable price. If you decide to use the bamboo skewers, be sure that you soak them in water for at least an hour before you put the shrimp on them, or the ends burn off, which makes turning them really difficult. If you put 4 on a skewer with a bit of space between, they cook more evenly than if they're all squished together. Brush your grill with oil, (I use the Becel cholesterol-free oil), or spray it with pam to make sure they don't stick. It usually takes about 4 minutes per side on med-high heat.

I usually serve them with brown rice and a fresh salad, or grilled vegetables.
