Ingredients: 1 cup unbleached all purpose white flour 1/4 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 cup old fashion rolled oats 1 egg 1 egg white 2 cups buttermilk
Sift together the flour, sugar, baking powder, and baking soda. Stir in the oats. In a separate bowl, whisk together the egg, egg white, and buttermilk. Pour liquid ingredients into the dry. Stir until moist throughout. Let the batter rest at least 1 hour or as long as overnight. Perheat skillet or griddle and spray with non-stick spray. Pour 1/4 cup batter per panckage onto the pan. Cook until bubbles start to burst on surface, then turn and cook until golden brown.
