I found this recipe recently while cleaning out my kitchen cupboards. I hope you enjoy!

Ingredients:
1 cup fiber One cereal 2 egg whites 1/4 cup vegetable oil 2 x 6 oz containers low fat yogurt (any flavor) 1 1/2 cups all purpose flour 1/3 cup packed brown sugar 1 1/4 teaspoons baking soda 1/2 cup fresh blueberries or raspberries (if desired)
Method:
# 1 Heat oven to 400 degrees F. Grease bottom of 12 regular size muffins cups or place paper baking cup in each muffin cup. Crush cereal.
# 2 In medium bowl, stir together egg whites, oil and yogurt. Stir in cereal and remaining ingredients except berries just until moistened. Gently stir in berries. Divide batter evenly among muffin cups, filling each 3/4 full.
# 3 Bake 18 to 20 minutes or until golden brown. Immediately remove from pan. Makes 12 muffins.
