do you like couscous.fry an onion and a green pepper diced finely in some olive oil. Prepare the couscous by adding boiling water. Add the onion and pepper , Add some indian spices. ( A small knob of butter will make it tastier but ive stopped adding this). Eat with some lean chicken.

| one of my favorite dinners for one is to marinate a chicken breast in some low-fat ranch dressing for about 2 hours, then shake off the excess ranch and roll the breasts in some bread crumbs (I buy the plain ones and then I add spices myself) and bake in a 350*(F) oven for 20-30 min. I ususually have it with some steamed veggies. If I'm cooking for others I'll also make some pasta with either fresh Tomatoes and olive oil (in season) or a little jarred/canned pasta sauce dressed up with herbs.
