| Thanks everyone for the great recipes. My own personal favorite is taking 1lb. ground turkey breast, 1 can low sodium black beans (drained and rinsed). Chopped Red and Orange peppers, 1 sweet onion. Final is brown or white rice. Season with Mrs. Dash, salt, pepper, and garlic. Brown the turkey meat, then add the onion until cooked down to your liking, then add the peppers. Add the beans last and put over rice it is delicious. Hope you like it. It makes a lot so you can have it for a few meals.

the "FEATURE RECIPE' for today is Mexican Lasagna which calls for ground turkey.
Myself I will substitute the wheat tortilla's for the mission low carb ones. I still eat them even though I don't do atkins anymore.
I want to try it real soon.
I also "doctor" the ground turkey when making burgers - add chopped red onion, mushrooms s/p garlic . sometimes i use the Lipton onion soup mix with it. They are really good either way.
I need to look into making a pizza.

| I'm making a lasagna with ground turkey tomorrow night! Also, browned ground turkey crumbles are good on homemade pizza which can actually be good for you if you make it at home! I roll the crust out really thin so I can load lots of veggies on there, and use just a little bit of low fat mozzarella. Ground turkey is also good in place of chopped chicken or ground beef for Asian-style lettuce wraps (like at PF Chang's).

I just posted this recipe on another thread but you may find it of interest.
I have a recipe for Turkey patties with Chilli Apple sauce This amount would make 12 patties or could be adapted for a buffet by making the pattie mix into really small patties that cld be speared with a cocktail stick & dipped in the sauce.
PATTIES 75gms fresh wholemeal breadcrumbs 3 tablesp skimmed milk 1 small onion grated 1 teasp dried sage 1 small dessert apple, cored & diced finely 500g lean turkey mince low fat cooking spray 1 tablespoon wholemeal plain flour
Method: Combine breadcrumbs and milk in a mixing bowl then mix in onion, sage, diced apple & turkey mince. When thoroughly mixed shape into patties of required size and chill in the fridge for 30 mins. Preheat oven to Gas mark 5/190C While the patties are chilling in the fridge make the SAUCE CHILLI APPLE SAUCE 1 red chili pepper, de-seeded and finely chopped 2 cooking apples, peeled cored & chopped (cooking apples in UK are usually Bramleys, large & not sweet variety) 1 tablespoon granulated sugar
To make the sauce place chili, chopped cooking apples and 2 tablespoons of water in a saucepan. Cover & cok gently for 10 mins, stirring occasionally, until apples have softened to a puree. Remove from heat and stir in the sugar. TO COOK THE PATTIES lightly coat non stick frying pan with lo fat cooking spray. Dip the turkey patties in the flour to lightly coat them and brown for 1 minute on each side. Transfer to a baking tray lightly coated with lo fat cooking spray and bake for 20 mins. Serve with the sauce

I cook some onions with ground turkey, then add black beans and corn, plus some cumin, chili powder, and cayenne pepper. Then I serve it mixed with brown rice or Kashi 7-grain pilaf (which is chewier - I love it.) Top with low/non-fat sour cream or plain yogurt.
Oh, I also usually add some balsamic vinegar for a little bit of tang, and put some hot sauce on top.
We just call it "Taco mix." Extremely filling.
