How do you cook HARD BOILED eggs?

My mom always taught me to cover the eggs with water, let them come to room temperature, and then put the pot on the stove. Once it comes to a boil, turn the heat off and let them sit, covered, for 12-14 minutes (depending on how firm you want the yolks). Then put them in cold water with ice right away--it makes them peel more easily.
On a side note, once when I was traveling in Scandinavia, my hosts always had soft-boiled eggs for breakfast. They always put them in these great egg-holders, and then you had to "kill" the egg to eat it (slice through the shell and the egg really quickly with a knife). Then you add a little salt and pepper. Delicious! You can get soft-boiled eggs the same way as hard boiled, but only leave them in the water for about 7-8 minutes.

I read this somewhere, can't remember where, but since I've started following these directions my hard boiled eggs come out perfect every time. So here it is for you to try if you would like:

Cover eggs with water, bring to a boil, turn fire off and cover for 10 minutes. Easy... Good luck

I do it like this:

Put eggs in cold water that covers them by about an inch.
Bring to boil.
Simmer for 12 minutes if you like your yolk moist but not runny.
Place pot of hot water and eggs in sink and run cold water over them to gradually bring the temperature down.

I never have trouble peeling my eggs this way wether I use fresh or old eggs.

I use Rachel Ray's method. Put the eggs in a pot of cold water over medium heat. Once the water starts boiling, cover the pot with a lid and remove from the heat. Let stand for 5 minutes, then peel. It prevents the green tinge.

And I put them in cold water right away sometimes adding ice to the pot. Of course if you want your eggs warm that ain't gonna work. ;)

I use part of the mommasalami/Julia Child method.

Eggs in pan just covered with cold water. Bring to a boil. Cover, remove from heat and let stand 10-12 minutes. Run cold water over them.

This gives me eggs that are still bright yellow in the yolks with no green and not dry.

Is it true that fresh eggs are harder to peel than slightly "aged" eggs?

Well, here it goes again...Im hard boiling eggs. Ill let ya know how they turn out and what method I used!!!

I found out through a caterer that you should put your eggs in a pot, cover them with water. Put on high heat with plenty of salt in the water. When water starts to boil, turn on timer for ten minutes. When timer goes off remove pot from stove and run cold water over the eggs. Place lid on pot with cold water in pot. Swish eggs around to crack shells. Continue running cold water till eggs are cool enough to shell. The salt in water eliminates the green around the yolk and cracking the shell in cold running water helps with the peeling process.

Lots of good ideas about achieving a hard boiled egg but when it comes to peeling the shell off I have found that if I tap the shell more or less all over with a spoon (or even just on the kitchen counter) then start peeling it from the 'sharp' end under running cold water the shell starts to come off really easily. You just need to get your finger under the membranebetween shell and white then use the water to help you ease the shell off. Sounds more complex than it really is.

Try adding a little white vinegar to the cooking water. It is supposed to soften the shell and make it easier to peel.
I know I've tried it in the past, and I think it seemed to work. I was going to boil some eggs tonight, so I am going to try it with vinegar and see if it really helps.

If you are stil having trouble there is one fool proof idea. Growning up my mom had a tool that went into the water it looks like a half egg. It will tell you exactly when they are done. You can pick up the kitchen utensel at target or walmart or any kitchen store. It works every time.

I can just imagine how smart i could really be if my brain wasn't full up of silly trivia..

Other egg tricks:
Very fresh eggs will lie on their sides in a bowl of water.
semi fresh eggs will stand on one end in a bowl of water
Rotten eggs will float.

put the egg into a big spoon and gently add it to the pot... it wont crack..

Ahhh, I just read something from Julia Childs

1. Lay the eggs in the pan and water to cover the eggs by 1 inch. Set over high heat and bring just to the boil; remove from heat, cover the pan, and let sit exactly 17 minutes.

2. When the time is up, transfer the eggs to the bowl of ice cubes and water. Chill for 2 minutes while bringing the cooking water to the boil again. (This 2 minute chilling shrinks the body of the egg from the shell.)

3. Transfer the eggs (6 at a time only) to the boiling water, bring to the boil again, and let boil for 10 seconds - this expands the shell from the
egg. Remove eggs, and place back into the ice water.

I just love that spinning trick! How do people come up with these ideas? I would never think to spin my eggs! I am definitely trying this out.

add salt to the water once it starts boiling..
Also to tell if the egg is done - take it out and spin it on your counter - if its spins in one spot its done if it wabbles around NOt done.

Add the cold eggs to water that is already boiling. eggs will cook to a hard center in 11 - 12 minutes. When the 11-12 minutes are up transfer them to a different (cool) bowl. Cover with cold running water for a minute and then add an entire try of ice cubes to the bowl and let this sit until cool or to desired temp.

I've found if I add the eggs at the begining to cold water then the shell sticks more than when using the method above.

i have never seen a burnt eggshell before... It turned black i've forgotten tea kettles before.. but never eggs.. it wasn't pretty.. :D I beleive it takes some skill to burn a hard boiled egg :D

Put eggs in the pot
Put cold water into the pot, so that it's about an inch above the eggs
Cook over medium heat til the water comes to a boil
Reduce heat to low and simmer for about 15 minutes. (this makes 'em cook a little gentler and prevents the greenish tinge around the yolk - or so i've been told)

Running cold water over the hard boiled eggs makes them much easier to peel


** don't do what I did two weeks ago, put eggs on to boil then walk away - and not remember until the smoke detector went off.. you can burn a hard boiled egg :) and the smell is atrocious

lol this sounds like me! I love to cook and do a pretty good job of it too, I think, but I have serious troubles over the simplest of things like hard boiling eggs! either they aren't done enough or half of the egg sticks to the shell! I am curious to know of some tips myself!

Im a great cook. For some reason, I just cant do hard boiled eggs. Every time I do, they wont peel.

Ive tried different forms of cooking them, used older eggs as suggested, and I still cant get it done right. I thought maybe on a big message board like this, Id find some tips that would help!
