Hi Cherryblossom, Tried your recipe last night, deeeelicious. Used the first fruits from our very own plants. In England we call Zuchinni's courgettes, they taste the same though!!! Martha-ann.

Hi all! I make this at home all the time and everyone seems to really love it!
Slice 4 zuchinni's in half length-wise and place on a foil covered baking sheet flat side up. Rub in some olive oil, and place in an oven for 20 minutes on 350F. After 17 minutes sprikle some low-fat shredded cheddar on the zuchinni, bake for another 3 minutes and you're done! Sprinkle salt and pepper to taste.
It's a low fat, easy to make vegetable for lunch or dinner. Hope you all like!
