| i got this recipe from my neice when she was doing low carbs. It's light and pretty good. It's an alternate to fried chicken. Instead of coating the chicken with bread crumbs, use grated parmesan. You still fry it but use canola or extra virgin olive oil.

| HEY AUTUMN. THERE ARE SOME SITES ON THE WEB THAT HAVE PRETTY GOOD LOW carb RECIPES. HERE ARE THE ONE'S I LIKE: www.lowcarbchristians.com; www.allrecipes.com; www.lowcarbeating.com and www.lowcarbmenus.com. WE ALL GET SICK OF CHICKEN BUT BUY A WHOLE ORGANICALLY RAISED CHICKEN WITH NO HORMONES TO PLUMP IT UP AND THAT HAS EATEN FREE RANGE. I LOVE TO FIX BEER BUTT CHICKEN AND IT IS EASY AND MAKES GREAT LEFTOVERS FOR SALAD, SOUPS, ETC. TAKE A WHOLE CHICKEN, REMOVE GIBLETS, RINSE INSIDE AND OUT. PAT DRY. TAKE NONSTICK COOKING SPRAY AND SPRAY INSIDE AND OUT AND UNDER THE SKIN OF CHICKEN. TAKE SEASONINGS ( I USE ONION POWDER, garlic POWDER, KOSHER SALT, FRESH GROUND BLACK PEPPER AND A HINT OF CAYENNE PEPPER ) OR ANY COMBO YOU LIKE AND RUB THAT CHICKEN WITH IT. DON'T FORGET TO PUT SEASONINGS UNDER THE SKIN AND INSIDE THE CAVITY. BUY THE CHEAPEST CAN OR 6 PACK OF BEER...OPEN A CAN AND THROW OUT 1/3 TO 1/2 OF THE BEER. GET A BAKING PAN OUT, PUT BEER CAN IN MIDDLE OF PAN, PLACE CHICKENS BUTT RIGHT OVER THE OPENED TOP OF BEER CAN AND PLACE IN A 350 DEGREE OVEN AND BAKE FOR ABOUT AN HOUR AND A HALF. THE SKIN GETS REALLY NICE AND CRISPY AND THE CHICKEN IS MOIST, MOIST, MOIST.

| PORK IS THE OTHER WHITE MEAT BESIDES CHICKEN AND A FAVORITE IN OUR HOUSE. BUY SOME SMALL PORK LOINS, COAT OUTSIDE OF LOINS WITH SPRAY COOKING OIL THEN COAT ENTIRE LOIN WITH YOUR FAVORITE SEASONINGS. PUT ON BAKING SHEET OR IN PAN AND BAKE AT 350 FOR 30/35 MINUTES. DON'T OVERCOOK AS PORK GETS DRY. SLICE AND PUT ON A GREEN SALAD, OR CUT THICKER SLICES AND SERVE WITH FRESH STEAMED VEGGIES. YUMMY AND GOOD FOR YOU. ALSO, YOU CAN MAKE NOODLES FROM ZUCHINNI. TAKE A ZUCHINNI LEAVING THE SKIN ON AND SLICE FAIRLY THIN STRIPS. SLICE THOSE STRIPS INTO SIZE YOU WANT. SAUTE IN PAN WITH COOKING SPRAY OR olive oil UNTIL SLIGHTLY AL DENTE OR STILL FIRM. SUBSTITUTE THIS FOR THE REGULAR PASTA AND TOP WITH ANYTHING YOU LIKE.

| Do you like fish? Shrimp? any seafood? There are a lot of things that you can do as far as grilling and baking seafood. Caesar salad (minus the croutons) topped with shrimp or blackened chicken. Pop open a can of tuna and make tuna salad. (Don't eat crackers, though!!)

Have you tried either the low carb tortillas or the low carb pitas made by Joseph's? I use those for a lot of my lunches - they are quite good. I'll put a salad into the pita or top the tortilla with an ounce of low fat cheese, melt it, dip in salsa and I have either a snack or light lunch.
Also - have you tried the whole wheat pastas out there? One of my favorites is to cook up some ronzoni thin spaghetti and top it with some pesto (not low cal - but you can go light on it) instead of spaghetti sauce. I'll usually toss in some steamed veggies, too.
