Anybody have recipes using fresh jalapenos?

Mere52 - The cheese stuffed jalapenos were great! I used light cream cheese and low fat cheddar cheese to stuff them. I still don't think that makes them a SP recipe yet, but they were tasty!

Ranch Tortilla Roll-Ups
2 packages (8oz each) fat-free cream cheese, softened
1 envelope ranch salad dressing mix
2-3 jalapeno peppers, finely chopped
1 jar (2 ounces)diced pimientos drained
8 flour tortillas
In a small mixing bowl, combine the cream cheese, salad dressing mix, jalapenos and pimientos; mix well. Spread over tortillas. Roll up tightly; wrap each in plastic wrap. Refridgerate for at least 1 hour. Unwrap and cut each into eight pieces. Makes 16 servings.
Nutrition- Ons serving is 4 pieces. 106 calories, 2g fat, 2 mg cholesterol, 419 sodium, 15 carbohydrate, trace fiber, 6g protein.

In the recipe below I forgot to say you need to simmer after you blend it, then add veggie to it while simmering cook till veggies are done.

If you like chicken toprtilla soup, make that...I grow all kinds of chilies and I like to throw a few in the pot when I'm making it, and it's one of those dishes that you practically ALWAYS have all the ingredients for, and it's really easy to make it healthy without sacrificing flavors or textures.

LOL before I ramble on more, let me know if you even like chicken tortilla soup and I'll submit the recipe.

My hubby doesn't eat without them honestly, There are many things you can make one idea is cook any kind of meat and then blend your jalepenos, onion, freah garlic, and either tomato or tomatillos(green tomato with the outter skin) and blend with a little water add cumin and salt if desired and you can make green chile youcan add any veggie like zuchinni, squash,corn or potato just about anything, as may or as little as you want. If you need more idea let me know.

Saute them with chicken or fish or add to a stir fry (seed them if don't want them too spicy). I know it's not soup season but I make a soup that's really good when topped with Jalapenos...
Cut 2 zucchinis into 1 inch pieces
Cook in half a 14.5 oz can low sodium chicken broth until soft
Let cool
Put in blender with 1 cup (or more) cilantro and blend...add more broth of needed to it's soupy smooth (watch when blending hot things)
Saute one chopped onion until soft in a pot
Add puree to pot
Add 2 more cans of chicken broth
Heat thoroughly (no need to boil and better if you don't)
Top with any of the following...chopped jalapenos, shredded chicken, tortilla chips, low fat grated cheese or sour cream.
Enjoy!!

MAKE FRESH JALAPENO POPPERS ON THE GRILL. U WILL NEED: A PAIR OF PLASTIC GLOVES, JALAPENOS, CHEESE, BACON AND TOOTHPICKS. PUT GLOVES ON AND MAKE A SLIT ON ONE SIDE OF PEPPER. USE END OF SPOON TO GET SEEDS AND VEINS OUT. STUFF WITH MIXTURE OF CREAM CHEESE AND ANY SHREDDED CHEESE YOU LIKE. WRAP A PIECE OF BACON AROUND THE WHOLE OUTSIDE OF THE PEPPER, SECURED WITH TOOTHPICKS. GET THE GRILL FIRED UP, PLACE ALUMINUM FOIL ON RACK AND PUT THE PEPPERS ON. TURN TO COOK THE BACON. THEY TAKE ABOUT 10-15 MINUTES TO COOK AND GET THE BACON CRISPY. I USE REAL CREAM CHEESE AND SHARP CHEDDAR CHEESE BUT LOW FAT CHEESES CAN BE USED. I USE A GOOD PEPPERED BACON BUT A GOOD TURKEY BACON CAN BE USED. THEY ARE EXCELLENT AND JUST BE SURE TO WEAR THE GLOVES AND DON'T TOUCH YOUR FACE OR EYES WHEN MAKING THESE.

Yum! How about Pico de Gallo? Hmm, I totally hacked the spelling of that I am afraid! But anyways, it's chopped jalapeno, tomatos, onions and cilantro. I don't really measure though.
