I tried this recipe today. It was good. I might try it with low sodium broth next time. Per 1 cup serving 205 Cal. 5 g fat 16g carbs 4g fiber 20g protien
Ingredients 3 cans great northern white beans 1 large onion 2-3 chicken breasts, cooked and shredded (the calorie count is from 16 oz. after cooking) 4 garlic cloves, pressed 2 - 4oz. cans of green chilies 2 t. cumin 1.5 t. oregano 6 cups chicken broth 8 oz. mont. jack cheese, shredded 1 T. olive oil
Saute onion in stockpot with olive oil. Add garlic, chilies, oregano, and cumin. Add full cans of beans. Do not drain. Add chicken broth. Bring to a boil. Lower heat and simmer for 2 hours uncovered. Add chicken and cheese. Stir until cheese is melted. (I put chicken in 20 minutes early.) Recipe says can be served with tortilla chips and sour cream. We skipped the chips and used nonfat yogurt.
