I saw something similar in a cooking magazine a few months ago, but couldn't remember where...so I winged it. Here's what I did:
--4 (4 oz. each) boneless, skinless chicken breasts --1 c. fat-free seasoned croutons (ground up in my food processor) --1 egg white --seasonings to taste (I used a little pepper, crushed red pepper, and garlic) --2 TBS grated parmesan --4 oz. pasta --2 c. spaghetti sauce --shredded low-fat mozzarella
1. Preheat oven to 425. 2. Spray cookie sheet with nonstick cooking spray. 3. Mix crouton crumbs, seasonings, and parm. cheese. 4. Roll chicken breast in egg white & then seasoning mixture. 5. Place chicken on cookie sheet. 4. Bake for 25-30 minutes. Meanwhile, cook pasta according to package directions. 5. To serve, put pasta on plate - slice chicken breasts into strips - place chicken breast on top of pasta...sprinkle with 1 TBS of the shredded mozzarella.
YUMMY!!!
My daughters even asked for seconds!!!
