hello shannon, i posted some recipes on a thread here called " Anyone interested for indian cooking".
in the same thread i added a recipe for my simple version of tandoori chicken. you could substitute curry powder for the tandoori masala and i think it would turn out quite yummy.

I love to make sweet potato quesadillas, seasoned with curry powder. Peel, boil, and mash a sweet potato, then add some shredded low-fat cheddar cheese, curry powder and cayenne pepper. Fill a whole wheat tortilla with the mixture, and fry it just enough to brown the outsides. Serve with fat-free sour cream.
I also use curry powder in a green bean salad that I love to make. The dressing is made from dijon mustard, maple syrup, garlic, balsamic vinegar, olive oil and curry powder, and is served over cold blanched green beans. Also delicious if you add some goat cheese.
