One week in my fridge - I keep it in the stainless pot I cooked it in and put some plastic wrap over the top and than the lid. I have never seen any mold on it ever and I have never gotten sick from eating it.

It lasts ONE WEEK?
You must have some super fridge or ziplock or something!
My cooked veggies do not really last more than 2 days without a hint of mold forming on them!

I really love fruit and veggies, but I find it hard to remember to eat them. Recently I found a solution to this problem. I make a huge pot of all my favorites. The one I made yesterday has carrots, celery, spinach (which I ate all of yesterday), cabbage, broclli, and zuccini, all fresh. I add one 15 oz can of diced Tomatoes with spices and put in about 5 cans of water, sometimes more, sometimes less depending on if I want a more soup like thing or a more veggie thing. I wait for the water to boil and than put the lid on and simmer for 10 minutes.

I last a week in the fridge and I really do like knowing I have fresh veggies ready to be nuked :-)
