anyone know of a low calories/fat alfredo sauce

The Smarter Fettuccine Alfredo posted below sounds good too. The one I'm posting was posted on another thread in this forum about Crockpot cooking by Ritamichelle. It does not actually use a Crockpot at all, as far as I can see!

Crockpot weight watchers recipes
FETTUCCINE PRIMAVERA (serves 4 @ 6pts)

1 teaspoon olive oil
1 onion, chopped
2 cups broccoli florets
1/2 cup evaporated skimmed milk
1 teaspoon dried basil
1/4 teaspoon freshly ground black pepper
1 tomato, coarsely chopped
4 cups hot cooked fettuccine
1/2 cup grated Parmesan cheese

1. In a large nonstick skillet, heat the oil. Add the onion and cook, stirring as needed, until softened, about 5 minutes.

2. Add the broccoli, milk, basil and pepper; cook, covered, until the broccoli is tender-crisp, about 3 minutes. Add the tomato and cook until heated through, about 1 minute.

3. Place the fettuccine in a medium serving bowl. Top with the broccoli mixture and the cheese; toss to coat.

PER SERVING: 330 Calories, 7g Total Fat, 3g Saturated Fat, 62mg Cholesterol, 254mg Sodium, 51g Total Carbohydrate, 7g Dietary Fiber, 17g Protein, 292 mg Calcium.

Try the tofu fettucine alfredo recipe here on Spark, it was really really good and low cal. My boyfriend (who isn't dieting) even liked it

Smarter Fettuccine Alfredo
Prep Time: 5 min
Total Time: 20 min
Makes: 4 servings, 1 cup each

8 oz. fettuccine, uncooked
1-1/4 cups fat-free reduced-sodium chicken broth
4 tsp. flour
1/3 cup PHILADELPHIA Light Cream Cheese Spread
3 Tbsp. KRAFT 100% Grated Parmesan Cheese, divided
1/4 tsp. ground nutmeg
1/8 tsp. pepper
2 Tbsp. chopped fresh parsley

COOK pasta as directed on package.
MEANWHILE, combine broth and flour in medium saucepan. Stir in cream cheese spread, 2 Tbsp. of the Parmesan cheese, the nutmeg and pepper; cook 2 min., stirring constantly with wire whisk until mixture boils and thickens.
TOSS pasta with sauce. Sprinkle with remaining 1 Tbsp. Parmesan cheese and the parsley.

This recipe is from "The Best Light Recipe" cookbook from Cook's Illustrated. I haven't tried it, but it looks okay. The book itself offers many alternatives to popular but unhealthy recipes.

Per serving: Calories 300, Fat 11g, Sat. Fat 6g, cholesterol 70mg, Carbs 36g, fiber 2g, protein 15g, sodium 580mg

Fettuccine Alfredo (serves 4)

3/4 c half-and-half
1/8 tsp freshly grated nutmeg
Salt
1 tsp cornstarch
9 ozs fresh fettuccine
2 ozs Parmigiano-Reggiano cheese, grated fine (about 1 cup; they urge you to use the real stuff from Italy for this recipe)
Ground black pepper

1. Bring 6 qts of water to a boil in a large pot. Using a lade or heatproof measuring cup, fill four individual serving bowls with about 1/2 cup of the boiling water each; set the bowls aside to warm.

2. Meanwhile, bring 1/2 cup of the half-and-half, nutmeg, and 1/4 tsp. salt to a simmer in a 3- to 4-qt. saucepan. Whisk the cornstarch and remaining 1/4 cup half-and-half together, then whisk it into the simmering mixture. Continue to simmer the sauce, whisking constantly, until it has thickened, about 1 minute. Cover and set the pot off the heat.

3. Stir 1 T. salt and the pasta into the boiling water and cook, stirring constantly, until al dente, 1 to 2 minutes. Reserving 3/4 cup of the pasta cooking water, drain the pasta.

4. Return the half-and-half mixture to medium-low heat and whisk in 1/2 cup of the pasta cooking water. Slowly whisk in the Parmesan. Add the pasta and cook, coating the pasta evenly with the sauce, until the sauce has thickened slightly, about 1 minute. Season with pepper to taste. Working quickly, empty the serving bowls of water, divide the pasta among the bowls, and serve.

Here's a great subsitute from hungry-girl.com! She uses shirataki noodles (made of tofu) in her recipe but you can subsitute in regular noodles.

1 Package Tofu Shirataki Fettuccine Shaped Tofu Noodles
1/2 Wedge The Laughing Cow Light Cheese
1 teaspoon Fat Free Sour Cream
2 teaspoons Kraft Reduced Fat Parmesan Cheese
Salt & Pepper (if desired)

Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses and sour cream. Mix thoroughly. Microwave to help melt cheese further, and mix some more. Add salt and pepper to taste. Enjoy. Serves 1.

(80.5 Calories, 3g Fat, 9 Carbs, 4g Protein, 4g fiber = 1 Point!!!)

Google "low calorie alfredo" or "low fat alfredo" and you'll get several options. Fat free cottage cheese, or fat free yogurt, etc seem to be a common ingredient. I think I saw a tofu alfredo recipe somewhere, too.

try using neufchatel cheese and fat free half and half. That should cut the calories already. Unfortunately I don't know any alfredo sauce recipes but I was thinking that the "Speedy Pasta" recipe (from this message board) would be kind of like an alfredo sauce.

I don't want to buy alfredo sauce that is out there..b/c it is loaded with calories and fat..and I was wondering of anyone knows of a low cal/fat recipe for it?
