You're a teacher? Me too! I'm teaching K-12 music at a private school right now, but I'm quitting after this year and I'm working on a special ed certification so I can teach in public schools.

I don't know how I made it so long without CPAP. Good grief. I was falling asleep while I was driving, but I felt like I had no choice but to keep carrying on. I was commuting and hour and a half back and forth to work and it's really a miracle that I didn't cause a major accident. I couldn't sit still for more than five minutes without falling asleep. I was miserable, alright... And I had started working out at 24 hr Fitness, dieting and I GAINED weight. I know it totally wrecked my body going undiagnosed for so long. And my short term memory is shot... But man, CPAP has totally given me my life back! I can't sleep without it anymore!

Okay, so I know this thread is about buffalo meat LOL. But I just had to sing the praises of my sleep doctor and my CPAP machine.

Hey there, Canticles...
Was noticing in your pop-up profile that you have sleep apnea. I do too. Got my CPAP machine last October and LOVE it! I feel like a new person, now that I'm actually sleeping at night (whereas before, apparently, I just spent all night struggling to breathe). The mask is kind of Darth Vader-ish, but hey--small price to pay. I'm hoping, though, that the weightloss will help me to not need it in the future.

We had buffalo steak tonight and we love it! :D It's just as tasty, I think, but with less fat.

*nods* true... but I figure for $4.50 I can have a delicious, healthy helping of patties, or a yucky-bad Big Mac...*L* no brainer, but I do limit it to once a week.

Buffalo is great. I grew up in SD, so I have had it numerous times. It is very healthy, but a little pricey.

Hi y'all...

Just wanted to say that if you haven't ever tried buffalo meat, you should! It's delicious and VERY low-fat.

My grocery store carries 8-oz packages of ground buffalo (about $4.49), and I've been using it to make an Indian dish called Shami Kabobs about once a week.

If you have an Indian grocery store nearby, run in and get a package of Shami Kabob spices and a small bag of lentil flour.

Basically, you brown the meat with the spices and a tad-bit of the flour in about 1/2 cup of water. Once the meat is done, dump it into a bowl and add 1 egg (you can leave out the yolk), then smush it all up. If there's too much water left in the pan after you've cooked the meat, just drain it off. You don't want your patties to be runny.

The last time I made them (only my third attempt!), instead of pan-broiling them on top of the stove, I plopped them into my George Foreman grill. I was amazed! Not a SINGLE DROP of grease fell into the little catcher thing!

Once the meat patties are cooked, weighing them reveals that you have 5 oz of meat--you can have all of it for about 360 calories, and it's delicious.

Soooo, next time you see buffalo/bison meat, give it a try! Just use it in your favorite ground beef recipes!
