| Try roasting them at 450 for 30 min or so. With a tiny bit of olive oil, they get very yummy.

I just went to the web site and this one sounds good to me.
Cauliflower Casserole
2 pk Frozen; chopped cauliflower (or head of cauliflower) 1 can fat free Cream of mushroom soup 1/2 c fat free Mayonnaise 1 ts Lemon juice 1 Jar chopped pimientos 1 c Crushed cheese crackers (could use 100 calorie pack) 1/2 c Grated low fat sharp cheese 1/3 c Chopped almonds or walnuts (optional)
Cook vegetables just until tender. Mix all ingredients in a bowl. Pour into greased 9"x11" dish. Sprinkle with additional grated cheese. Bake for 30 minutes at 350 degrees.

I've actually made cauliflower soup...
Steam cauliflower (cut into big florets) with thyme and dash of poultry seasoning. When completely done, cover it with milk (I use skim, but 2% or cream can be used if you don't care about calories). simmer about 20 minutes to let flavors marry. Add pepper (and salt if you like). Use hand blender and puree the cauliflower. Last time I made this, I just used hand masher and left the pieces bigger. Serve with spinkle of cheese and more thyme. This was one of Rachel Ray's recipes, so for exact measurements, check it out on food network's website. It's awesome!!! Hope this gives you another idea. :)

This is my mother-in-law's recipe, though I've never tried it...
CAULIFLOWER "MASHED" POTATOES
1 head cauliflower 1/8 skim milk Salt & pepper Paprika
Cook cauliflower until fork tender. Place cauliflower (in pieces), skim milk, salt and pepper in blender. Whip until smooth. Pour cauliflower into small baking dish. Sprinkle with paprika and bake in hot oven until bubbly.

I have heard of people mashing it up like mashed potatoes. Not sure what they add to it.

| I don't have any sauces, but curried cauliflower is good, as well as cauliflower with tomatoes, onions, cilantro and garlic! You could try fresh squeezed lemons too!

Hello everyone
I am boiling a whole cauliflour as a side dish for dinner tonight and I am looking for a few suggestions for a nice low cal sauce to smoother it in , something other then cheese... please if you have any ideas please let me know as I have about two hours to complete this meal. thank you, Elayne.
