| Aaah, I see. I've only seen the show once or twice so I wasn't aware of that. My kids have seen the show more often than I and her gestures and animated way of speaking drives them a little bit nuts.

| Actually, STOUP isn't a typo -- that's one of Rachael's cutsie names ;-) I happened to see that episode -- the idea is that it's in between a STew and a sOUP. (Maybe why you found it so thick.) Bet they didn't think of it being hard to search for...

Which one of Rachel Ray's recipes? I went to Food Network and found 2 black bean soup recipes that were hers; one with pumpkin and one that she serves with Monte Cristo sandwiches. (NOTE: There's a typo on the FoodTV website, if you're searching by the word SOUP -- They've spelled it STOUP in the title and that messed up my initial search. Just a helpful hint, lol.)
Here's the recipe I used; I forget where I got it from originally. I don't add the cheese or salsa so it's not included in the nutritional analysis. It's very easy.
Cajun Black Bean Soup (Recipe has been scaled to make 4 servings.)
1 tablespoon vegetable oil 2/3 onion, chopped 2 cloves garlic, chopped 3/4 teaspoon cumin 2 teaspoons chili powder 1/4 teaspoon oregano 2 (15 ounce) cans black beans 1 can chicken broth (or more)* Black pepper Salsa (optional) Shredded cheese (optional)
Heat oil in large pot over medium heat. Add onion and cook 5 minutes. Stir in garlic, cumin, chili powder and oregano. Puree 1 can of beans; add to pot. Add second can of beans (do not puree) and chicken broth. Reduce heat and simmer for 15 minutes, stirring often. Add black pepper, to taste. Garnish with salsa and shredded cheese on top.
*The original recipe did not call for chicken broth but I found the soup to be way too thick so I added it.
Calories: 167 Total fat: 3 Sodium: 707 Carbs: 26.5 Fiber 10.4 Protein: 9.8
