This recipe is from ivillage and it sounds awesome!
Each of these naturally sweetened, low-fat muffins is packed with flavor and healthy flaxseed. Good tasting and good for you!
Yields: 12 muffins Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes
INGREDIENTS: 1 cup flour 1/2 cup whole wheat flour 1/2 cup flaxseed meal (see note) 1/2 cup quick oats 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 cup egg substitute 1 cup buttermilk 4 tablespoons honey 2/3 cup raisins
DIRECTIONS: 1. Mix all dry ingredients together in a bowl.
2. Combine liquid ingredients in a separate bowl; keep raisins in reserve.
3. Stir liquid ingredients into dry ingredients all at once, add raisins and stir until thoroughly moistened but the batter still appears lumpy.
4. Fill muffin tins lined with paper or foil cups about two-thirds full. Bake at 400°F for 20 to 25 minutes.
Cook's Note: Use a coffee grinder to process flaxseed or purchased it already ground.

I am looking for a good fairly low cal flaxseed muffin if anyone has one please. I looked through the recipe swap and didn't find anything, unless I missed it. Thanks Jan
