| cut potatoes into chunks (not to big not to small) Sprinkle to lightly coat - Onion Soup mix on them and bake in a tin foil packet. When they are done baking, (check with a fork) spinkle grated low fat cheese on them and cover to allow to melt. This can also be done on the BBQ

Check your grocery store for the sweet potato's that are individually wrapped to cook in your microwave. I like to spray mine with "I Can't Believe It's Not Butter Spray" and sprinkle it with a little Brown sugar, This is my favorite 120 calorie snack!
1 Medium Sweet Potato - 105 Brown Sugar - about 12 calories per tsp.

I am lazy, so i just throw potatos into a steamer with broccoli or carrots. Ignore for 20 minutes and then add salt and pepper and a good light spread.
Prep time - maybe 90 second. cook time - ignore for 20 minutes.
good healthy lazy cooking. :)
It is also a great light meal to fill out a day where you have a big lunch or if you are planning a big dinner.
Adding a chicken breast on the foreman grill or some other lean meat can add protein and enough variety to the mix. (or you can be bad, foreman grill 1 link of italian sauage or a small steak and still stay within your calories while feeling like an indulgence)

I haven't tried this one yet, but sounds good.
3 LARGE Sweet potato's cut into wedges 3 LARGE IDAHO Potato's cut into wedges 1/2 cup Zesty Italian Dressing (save 30 calories by using Light done right dressing) 1/4 Cup Parmesan Cheese 2 TBLSP Parsley
Mix potato's and dressing. Bake at 375 for 30 minutes, turn and bake another 30 minutes. during the last 5 minutes of backing sprnkle on the parmesan cheese, and before serving sprinkle on the parsley. Makes 8 Servings
I also like to make Mashed potatos with FF sour cream instead of milk, and then add the Chives / Green onions, and some bacon bits. No butter or gravy. I think my brother likes to add parmesan / Romano cheese to it too.

| I love my baked potatos with cottage cheese and salsa. Not only does it taste great, but it cools it down quickly, so it is ready to eat right away!

We have baked (nuked) potatoes atleast once a week! We use fat free sour cream, 2% cheese, lemon pepper, etc to top them!

I like to make mashed potatoes...easy to do and freeze for later,,,,unsalted, whipped butter is only 50 calories a tbsp w/no sodium at all.....
use low fat sour cream (instead of butter) and crushed garlic, whip it all up for a tastey treat....
don't like garlic? what goes better with sour cream than chives?....
If all else fails, a medium potato is only 100 calories, nuke it, top with nice steamed broccoli and a slice of low cal cheese...purrrrrrr

| I slice red pototoes pretty thin coat them with just a little olive oil and then place on the George Forman. They are SO good!

| I am a potato fan!!! I can't seem to find too many recipes incorporating potatoes...that are good for you. Does anyone have any recommendations or suggestions???? I would greatly appreciate it!
