Hey there - there's a WHOLE LOT of programs that send teachers to China. One word: RESEARCH, RESEARCH, RESEARCH (okay, that's three words). I'm a teacher in public school in Canada and a university out of South Korea hires us to go over for the summer to teach. I've met quite a few other ESL teachers from other countries, and while teaching ESL can bring you a lot of $, there can also be a lot of scams. Check out dave's ESL cafe online. I think he has a listing of recommended places. Also, before you sign a contract, get a lawyer or someone knowledgeable to look it over first. It's a little anal, but way better safe than sorry. Teaching ESL overseas can be incredibly rewarding, you just gotta make sure you've covered yourself before hand.
PS - teaching overseas is a great weightloss technique - eating nothing but rice and soup!! ;)
