Happen to stumble over this site and this lady lost over 100lbs in less than a year. Its a great site with everdyday recipes and menus that she kept in a journal. CHECK IT OUT!! good info

CAULIFLOWER POPCORN

1 pound cauliflower
2 T oil
4 tsp mrs dash
salt to taste
pinch of splenda(optional)

cut cauliflower into bite size pieces. Put in a large plastic storage bag or large mixing bowl. drizzle oil over cauliflower then sprinkle dash little salt. close bag and shake. until coated. spread in layer on cookie sheet bake at 350o for an hour turning them every 15mins, bake until brown but not burnt.

makes 4 servings
97 cal 7g fat 3g protein 7g carb 3 g fiber 4 net carbs

My grandaughter loves them and we made them into animal shapes with her toy cookie cutters. It was fun for both of us. Enjoy!!! Ruth

Check out "Eat Yourself Thin with Fabulous Desserts" by Nancy Moshier for great low carb, sugar free recipes. She is also the author or Eat Yourself Thin Like I did, another wonderful book. George Stella also has great low carb deserts.

I found a recipe for Gummie Worms or whatever shapes you want to make them into. They only have 16 Calories in 20 of them and no carbs.
2 pks. Jello 4 serving size SF, 1 Envelope Kool-Aid no sugar added, 3 Envelopes Unflavoured Gelatine and 1 cup boiling water, mix all until dissolved, pour onto a plate or square cake pan and let set. Roll like a jelly roll and cut into worm lenghts or cut with small cookie cutters. Whatever you like. If you do not want them sour omit the Kool-Aid. They are almost like having candy. Enjoy

I have recently gotten hooked on soy nuts, no salt.
They seem to satisfy the need to snack and a few do it for me. Unlike peanuts which I would like to eat the whole can.

I really like the south beach Cookies and they have that extra fiber in them that's good for you too! My favorite south beach snack is their Peanut Butter Bar. I find it is great for an afternoon snack to get you through until dinner or as a dessert.

Permanent..Have you tried the Five Spice Chicken from the south beach book? It is a family favorite now.
I think that is a great book, I use it alot.

The south beach book has some healthy and tasty recipes. They aren't real low carb like atkins ,but much more healthy. They include veggies.

I am having a hard time keeping my carbs under 100. Hope someone out there has low carb muffin, cookies and goodess that will help me curb my need for sweets and still keep my carbs under control. I like to take the muffins to work and keep cookies in the freezer. The ones I have made from the Spark list are still to high. Hope to hear from all of you with some yummy alternatives. Have a good one.
