my newest favorite breakfast!
1/4c egg beaters 1 large egg 3/4c sliced fresh mushrooms 1/4c diced onion 1/3c sliced/diced zucchini 2tbs milk salt & pepper to taste
Directions Dice all veggies Beat egg beaters, egg and milk, season to taste. Saute veggies in w/nonstick spray In seperate pan, cook eggs on medium, putting lid on for a few min to set the top. Once eggs set, place veggies on one half and fold omelette over. Cook on medium for another few min until done.
