Part of why I started growing them was because they deteriorate SO quickly that buying them in the grocery I'd find the tail ends would already be going bad. I don't do them very often, when we do a Chinese feast, but when I do I'll take the time to grow them myself a couple of days ahead. I find they just kind of taste like dirt to me.

You have to be careful of microorganisms with any kind of food as often the cleanliness of the facilities prepping or packaging food are less than what you'd do at home. Even with training, often people are hired for a low wage and they aren't as careful as you might want them to be.

As a company we have stopped serving them in unprepared manners. We have taken to only buying them for special events...and then only when we are sure to cook them.

This is something you can get by if you grow your own sprouts...something I have been doing for a while. and it only takes a corner of my window sill!

Make sure you wash them really well if you don't plan to cook them a lot, several restaurants have stopped serving bean sprouts because of samonila.

I've not had bean sprouts but maybe a couple of times. I didn't know you could cook them . . . guess it's not a real southern thing - but I'm willing to try!

I'm not sure about one foot of space but I grow my bean sprouts in a 1 qt mason jar just fine. I actually just set the bottle on top of my microwave. We've also done broccoli sprouts which are amazing and peppery tasting for salads or sandwiches.

I like them stir fried on their own in a tiny bit of oil with soy sauce and chili flakes. They make a nice side dish with an orientalish meal like sweet and sour meatballs and rice or a nice orange chicken dish.

Oh and don't forget to try them in your salads...adds a great crunch. Just wash and you. I've also added them to my spaghetti, just tossed them in right after I finish or you can cook them if you don't like crunchy!

add them to the stir-fry last so they stay crispy. If they get cooked too long they get limp and mushy. Other than that theres not much to cooking bean sprouts :)

i'm a big fan of chinese food, and there's always bean sprouts and stuff like that. i don't see them in cans (and if i did, they'd be uber expensive, so i don't know if i wanna go that route--i might've seen them once).

but i do know that some stores i go to have them in the produce section. but i've never cooked with them and don't know how to treat them, though i love having them in chinese food.

anybody know what to do with these guys? i'd love to have them in my next stir fry meal.
